As for operation costs: 30-35% of gross sales is taken out for ingredients and supplies. Any money leftover from one week will roll over to the next week's ingredients fund. At the end of the year, 30-35% of the gross sales of the last week are removed for the startup ingredient fund for the next year. Any other rollover from previous weeks is donated to the designated charities decided upon at the beginning of that Summer.
